Introduction

Background
Over the last decade, increasing concerns about health risks related to food safety, nutrition and diets have had significant impacts on food-consumption patterns in Europe. The high demand for high quality food for the consumer involves not only nutritional aspects but also items dealing with food safety, sensorial properties of food, food availability, convenience, image and environmental aspects.
Therefore there is an urgent need for highly educated people who are able to collaborate in a multidisciplinary way on the subject of food production and nutrition in the field of public health. The link between food and health is a matter of continuing research especially the influence of the processing parameters in the whole food chain on the health of the consumer.
During MSc-degrees in food sciences and nutrition students have been trained in one specific field such as food technology, food processing, nutrition and public health nutrition, but they are lacking an overview of the link food-nutrition-health.
On the other hand there is an increasing tendency for students to continue their education on the doctorate level. During their PhD-study programme they concentrate on research, but more and more institutions are demanding that the PhD students attend specalised courses in order to be trained in a multidisciplinary way. This Intensive Programme constitutes an example of a module in teaching programmes for PhD-students.

Target group
PhD-students performing research in the field of food science and nutrition constitute primary target group, but PhD-students from veterinary sciences, medical doctors, pharmacists can also enrole. Course participants will benefit from the experiences introduced by a number of graduate schools within the IP partners especially due to the international dimension of these schools. The students will have the opportunity to present their research projects and to discuss the results with other students and staff. The selection of the PhD-students will be performed by their home university. Major selection criteria will be the research topic in relation to food and health and English proficiency.

Course contents

Course aim
During this advanced course PhD students will be confronted with a new interdisciplinary approach covering the multidisciplinary relation food-nutrition-health.

Course design
The curriculum consists of the following activities: courses taught by experts, seminars, project work by an international group of students, presentation of the project by poster, industrial visit, and multiple choice examination.
Due to the workload of the taught courses, the preparation and oral presentation of the group work, the poster presentation and the examination 5 ECTS are attributed to this course on condition that the students successfully complete the examination.
